Easiest Peanut Butter Fudge

I take no responsibility for the creation of this recipe, just the responsibility of eating it. 🙂 Michael and I recently went to a cookout. I slaved away and brought a homemade berry pie. My friend worked about 10 minutes and brought this. Throughout the evening, my husband literally hovered over the table scarfing down this delectable fudge. Then, he proceeded to talk about it for days. Never mind my berry pie. ha! So last week to contend for the “BEST WIFE” award, I decided that since he talked about the fudge for days after eating it, I’d go ahead and make him some. The ingredients are all pretty common to any kitchen, which makes any recipe a winner in my book.

Now, I don’t claim to be PW. I’m not as fancy; I got my KitchenAid second hand; I don’t have crazy natural light in my kitchen; my ingredients are all generic; and my cookware is not on par with her Le’-Crusuet-whatever (read: I’m not rich. haha). But one thing that I do like about PW’s recipes is that the pictures make me think, “I could do that.” So that’s why I figured I’d do this fudge in pictures. Here the rundown of making this fudge. It’s super easy.

Melt butter in a medium saucepan over medium heat.

Stir in brown sugar and milk.

Bring to a boil and boil for 2 minutes, stirring frequently.

Remove from heat. Stir in peanut butter.

and vanilla.

Place confectioners’ sugar in large mixing bowl and pour sauce over it.

Beat until smooth; pour into an 8×8 inch dish. (At this point I called my friend who had originally made this because the stuff doesn’t POUR. It’s more like a Dump and Pat operation. She confirmed.)

Chill until firm and cut into squares.

Confession Time: My fudge wasn’t as good as my friend’s. I have an inkling that because I was so busy taking pictures of the process, I didn’t measure out my powdered sugar as well as I should. That, and I may or may have boiled it too long. It came out harder than my friend’s fudge, but my husband still ate it. It’s good stuff!  But don’t take my word for it, take the 993 people who gave it great ratings at allrecipes.com  Let me know if you try it!

Not All are Flops…

Well, after my flop of a meal the other day, I’d like to set the record straight and say that most dishes are edible and not terrible!

Here’s a couple of winners recently.  My sister went to Italy (jealous) recently, and brought back a little bit of pesto to fatten me up- (JUST what I needed…)  But I will have to say, IT WAS DIVINE!

What wasn’t scarfed up as a dip for bread was used in this yummy recipe: Creamy Pesto Pasta Salad with Chicken, Asparagus and Cherry Tomatoes.  This is a perfect summer dinner, and since I LOVE growing cherry tomatoes during the summer, this will be one of my go-to recipes to use them!  *I didn’t have asparagus on hand, so I used some thin green beans in its place.

Now, all my sister needs to do is go back to Italy so I can make it again!

My next “I’m in love” dish is my favorite breakfast dish for company.  The reason this recipe is stellar is  because it takes so few ingredients to make a nice breakfast (and a recipe that 98% of the population has on hand at all times)!  It’s the easiest thing in the world to make–and great too!  Also, if you like breakfast in bed, this is a great recipe for husbands to make!  The picture below is Michael’s handiwork.

Puffy Oven Pancake

1 Large Apple (Variation: Peach is also great!)
2 tablespoons butter or margarine
2 eggs
1/2 cup all-purpose flour
1/2 cup milk
1 TBSP brown sugar
1/4 teaspoon salt
cinnamon & sugar to taste

1. Heat oven to 400°F.  Peel and thinly slice apple (If the apple isn’t very tart, I usually add a little bit of lemon juice.)
2. In 9-inch glass pie plate, melt butter and swirl around pie plate to make sure it’s all covered. Add Apple to bottom of pie plate.  Sprinkle with cinnamon & sugar or brown sugar (I just lightly cover the apple area with both).
2. In medium bowl, beat eggs slightly with wire whisk. Beat in flour, milk, sugar and salt just until mixed (Don’t overbeat). Pour batter over apples into pie plate.
3. Bake 25 to 30 minutes or until puffy and golden brown. Sprinkle with powdered sugar (optional).  I enjoy it with homemade berry syrup–a personal fav!
4. Eat.

*You can invert it onto a serving plate or serve as is.
*This recipe is easily doubled!
*It’s SO EASY AND SO GOOD!
*Don’t worry if it puffs up in the oven like crazy. It deflates soon after you take it out.

Cheap-o Baby Food!

Nine months into this new stage of life called mothering and it’s been the ride of a lifetime.  And one that I’d be happy get back in line and ride again. I truly love being a mom and am thankful for the little blessing that God has entrusted to our family.

Once I knew that a little one was on the horizon, questions started immediately running through my head.  How am I going to do this thing called mothering?   Would I make my own baby food? Or buy stock in Gerber? Attachment parenting? Schedule?  Breastfeed?  Bottle?  Cloth diapering? Disposables?  Way too many choices.  And with so many looming options, I started to wonder where the manual was–especially since these days even the simplest child’s toy includes a manual.

And each person seems to know (or think they do) the protocol to mother ‘THE RIGHT WAY’.  And it was my experience that everyone also wanted to share it–even down to the cashier at Kroger.  Even when random strangers don’t care to share how you should parent, there are equally as many people willing to be  the naysayers to all your good intentions:  “Oh, we’ll see how long THAT will last…” (especially in regards to my cloth diapering choice & desire to breastfeed.)

As everyone does, we have done what works for our family.  I’m not naïve to think our way is the BEST way.  But OBVIOUSLY, we do what works best for us, or we would do otherwise.  And each set of parents will chart their own parenting blueprint, and I’m truly fine with that.

I started feeding Pierson solid’s at 6 months.  I purposed to make his baby food because I figured it would not only be cheaper, but I also figured that Gerber couldn’t do any better than my fruits, veggies, and blender could.  And it has worked for us!  Amazingly, my budget stayed the same, and no one as gone hungry.

Lately, making baby food has become increasingly easy.  Here’s why.

On Wednesday, I made an easy, yummy teriyaki noodle dish.  (THANKS, ALDI!!!  Why I love Aldi:  This yummy 2 lb veggie/noodle/teriyaki sauce was $3.00; the chicken was $2.00.  Total meal =$5, plus a couple dashes of extra sauces to kick it up a notch.)

I did a full month and a half of pureed fruits and veggies, then started introducing this type of baby food.  He loves it!  The past couple of weeks, little guy has eaten teriyaki chicken noodles, Stir fry, beans and rice, curried chicken salad, zucchini chicken casserole, chicken pot pie…you get the picture! Easy schmeezy baby food that takes no extra work (other than ensuring your meals are healthy & balanced!)

YEAH FOR SAVING $$$!

Now this is where the picture documentary stops.  What I did NOT anticipate with this recipe was moving it to the fridge, only to have the electricity shut off for 4 days. That’s why you don’t see the crock-potted apples, nor the the food processor part, nor the eating the final product part.  Oh, well.  Use your imagination a little.

Apple Butter is W.O.N.D.E.R.F.U.L!  It takes a full day to make, but is well worth the experience.  Try it.  I guarantee that you won’t be disappointed….unless you do what my dad once did.  He slathered his toast up with apple butter, took a ginormous bite and was rudely awakened by the BARBEQUE sauce he had mistakenly spread all over his toast.  Teeeheee.  Happy Wednesday & Happy Apple Butter-ing!
